For my next blog I was juggling between the idea of making an Apple pie or Quiche But then again I haven’t really made anything savory in any of my previous posts therefore I thought of making these spinach and cheese quiches. These quiches are absolutely delicious and kind of melts in your mouth. I have used spinach but you can use any kind of fillings like chicken, mushrooms, ham, onions etc. I just had the regular processed cheese in my kitchen which also works fine but these would taste heavenly with a bit of cheddar and Gorgonzola.
Ingredients (Makes 12 small quiches)
100gms unsalted butter
5gms salt (Omit the salt if using salted butter)
1 egg
10ml cold water.
Filling
1 bn spinach
1 tsp garlic
100gms Cheddar/Gorgonzola
(Even processed cheese would work)
1 Egg
100 ml Milk
100 ml fresh Cream
1 Gr Chilly
1 Tbl sp Oil

Method
In a mixing bowl take refined flour and butter make sure the butter used for making the short crust pastry should be chilled. Grate butter and mix it with the flour and chill the mixture for some time.
As making mini quiches i have not blind baked the pastry instead i have Pricked the rolled dough with a fork this stops the pastry dough from rising. I did not have a pastry cutter of the desired size therefore i have used lid of a bottle as a cutter.
You can use individual pie moulds . I find using muffin tins much more convenient also should work fine. Go on putting the pastry in each individual moulds
Preheat the oven to 160 and half bake the pastry for about 10 mins till it starts getting slightly golden colour.
Now remove the pastry from the oven put come chopped cheese at the base . Next add the spinach mixture
Make a quiche mixture by just mixing milk, cream and egg.
Slowly pour the quiche mixture try not to spill it .

TIP: Its a good idea to pour this mixture when its half way inside the oven, so u you avoid spilling the mixture all over.
